Irish Soda Bread Mix

2 1/2 cups all-purpose flour

1/2 cup whole-wheat flour

1 cup dried currants

1 cup light-brown sugar

1 tbsp baking powder

1 tsp baking soda

1 tbsp sugar

Combine all ingredients in a mixing bowl and then put in a jar or you can layer them as follows: 1 1/2 cups flour, 1 cup brown sugar, rest of flour, baking powder and baking soda combined together, and then 1 cup currants. Put sugar in craft bag. Put on top of rest before you seal the jar.

Attach gift tag with cooking directions.

Cooking Directions:

1 jar Irish Soda Bread Mix

1/4 cup butter or margarine, softened

2 eggs

1 1/2 cups buttermilk (or 1 1/2 tbsp lemon juice or vinegar then fill rest of 1 1/2 cups with regular milk and let stand for 5 minutes)

Preheat oven to 350. Place bread mix in large bowl. Cut the butter in. Add eggs and buttermilk and stir to blend. When the mixture is smooth, pour into a greased 9-inch round pan. Sprinkle with sugar. Bake for 45 minutes or until a toothpick comes out clean. Serve warm.

Makes 1 loaf.
