Oaty Apple Cupcakes

Modified from Cupcake Heaven

Cupcakes

1/2 cup butter, softened

3/4 cup brown sugar

1 extra-large egg, lightly beaten [I only use extra large normally]

3/4 cup unsweetened applesauce [note unsweetened!]

2 cups flour

3 tsp baking powder

1 tsp ginger

1/4 tsp cloves

Topping

2 tbsp butter, melted

1/4 cup powdered sugar

3 tbsp chopped walnuts [I beat these up with a heavy pan...well, Adam does! Okay, I don't like nuts, but I didn' t mind these here, I probably wouldn't buy it special, I would just put in more oats here.]

2 tbsp rolled oats

2 tbsp flour

1/2 tsp cinnamon

Preheat to 350. Line 12 muffin pan with cupcake liners.

Beat butter and sugar until pale and creamy. Slowly add in egg and then applesauce, beating well. Add flour, baking powder and spices and mix until just combined [because I did a double batch, I mixed this in a separate bowl, then added in in parts].

To make topping, combine all ingreidnets but butter. Then mix in butter until this resembles coarse breadcrumbs. Set aside.

Sppon batter into cups then sprinkle topping. [Okay, I ran out of topping...that's probably because I put too much on, but I liked what I did, so I'll just make more topping next time...as a note, I made the rest plain (yes, I could have made more, I chose not to) and they were good like that, although I would use frosting then.]

Ba for 20-25 minutes. Cool for 5 minutes in pan, then put on rack to cool completely.

Makes 1 dozen [I made a double batch and got about 2 1/2 dozen].
