Fajitas

Modified from What Can You Make in Your....

1 1/2 lb beef, sliced thin (I used moose, which can be tough and it wasn't doing it this way)

1 1/2 tsp cumin

1/2 tsp seasoned salt

1/2 tsp chili powder

1/8 tsp cayenne pepper

2 tbsp canola oil

2 tbsp lemon juice

1 garlic clove, minced

1 sweet red pepper, thinly sliced (we only used about 1/2 of one)

1 onion, thinly sliced (same here)

flour tortillas

shredded cheese

any other toppings

Toss steak with cumin, salt, chili power and cayenne. Turn instant pot on saute and brown the meat in batches. Add lemon juice and garlic to cooker and loosen browned bits from bottom. Return all the meat to the instant pot. Lock lid and set to beef (high) for 20 minutes. When done, allow to naturally release pressure for 10 minutes then finish with quick-release for any remaining pressure. Remove meat to keep warm.

Add peppers and onions to the cooker, lock lid and select steam setting. Cook for 5 minutes. Quick release when done. Okay, so this was too mushy for Ray. I think I will probably end up just tossing the vegetables in a pan on the stove while the meat cooks in the future.

Serve vegetables and steak with tortillas and other desired toppings. We served just with cheese, but this is whatever you like.
