Taco Casserole

Modified from Grandma's Cookbook (I don't know the name...I got the cookbook off my grandmother's shelf and forgot to write down the title)

1 lb hamburger

1/2 cup diced onion

1/2 cup green pepper, diced

1 pkg taco seasoning mix

1 can corn (15 oz)

1 can (15 oz) tomato sauce

1 pkg frozen potatoes (16 oz - I used a bag labelled Southern hasbrowns...little potatoes cuby things)

Topping

2 pkg corn bread mix (I used Jiffy mix)

1 cup milk

2 eggs

2 cups shredded cheddar

Cook hamburger with onion and green peppers. Drain. Add taco seasonings and follow directions (so make tacos), then mix in corn (drained) and tomato sauce. Grease a 13 by 9 pan. Put frozen potatoes in bottom. Add beef mixture on top of them.

Mix the corn bread, milk and eggs, then put on top of beef mixture. Top with cheddar.

Bake at 350 for 55 minutes or until golden brown. (I didn't cover and the cheese got very crispy....too crispy for me (not for Ray), so I'll probably cover it next time).

Serves 5 (I'd say more....)
