Fettuccine Alla Carbonara

Modified from Better Homes and Gardens

6 slices bacon, diced

6 oz dried fettuccine or linguine (I used regular spaghetti as Ray hates fettuccine)

1 beaten egg

1 cup half-and-half, cream, or milk

2 tbsp butter

1/2 cup grated Parmesan or Romano cheese

1/4 cup snipped fresh parsley

coarsely ground pepper

garlic powder (I added some of this and still thought this sauce was bland so I'm going to spice it up even more next time)

Cook bacon until crisp, drain on paper towels. Cook noodles until tender, drain well. Meanwhile, for the sauce, in a small saucepan combine egg, half-and-half, and butter. Cook and stir over medium heat until egg mixture just coats a metal spoon (about 6 minutes). Immediately pour sauce over fettuccine, toss gently to coat. Add Parmesan cheese and parsley, toss gently to mix. Season with pepper. Serve immediately. Ok, if you noticed this never says when to add the bacon. I added at end when tossing, I think I'm going to cook it with the sauce now to give the sauce more flavor.

Makes 6 side dish servings.
