Chicken Stir-Fry

Modified from Light and Tasty

***needs to marinate for at least 30 minutes so plan ahead!***

1/2 cup chicken broth

1/3 cup reduced sodium soy sauce

1/4 cup white wine (or you can use chicken broth)

2 garlic cloves, minced

1/4 tsp ground ginger

1/4 tsp pepper

1/8 tsp crushed red pepper (cayenne) flakes

3/4 lb boneless skinless chicken breasts, cut into strips

4 tsp canola oil, divided

2 cups broccoli, diced

2 cups carrots, diced

1 cup peas (or you can use snow peas, cut into 1 inch pieces...I don't like snow peas, so I just use regular)

(2 cups shredded Chinese or napa cabbage....I don't like cabbage in stir fry, so I skip this, but add it if you liked it)

6 oz spaghetti, broken

2 tsp cornstarch

In a bowl, combine the first seven ingredients; set aside 3/4 cup. Place chicken in sealed container and add remaining marinade. Seal and turn to coat. Refrigerate for at least 30 minutes.

Drain and discard marinade. In a large nonstick skilled or wok, stir fry chicken in 2 tsp oil for 3-5 minutes or until no longer pink. Remove and keep warm. Stir fry vegetables in remaining oil until crisp tender (You can use either fresh or frozen vegetables and adjust cooking time accordingly. If you are using frozen, thawing and draining the water helps to reduce cooking time and make it easier to not burn. We did it last time with frozen and forget to defrost and it tasted fine, just took more cooking time and had to watched closely). Meanwhile, cook pasta according to package directions.

Combine cornstarch and reserved marinade until smooth (if you stick it in the refrigerator while the chicken is marinating it's easy to add the cornstarch and not get lumps). Add to vegetable mix now. Bring to a boil, cook and stir for 2 minutes or until thickened. Drain pasta; stir in vegetables and add chicken in. Cook and stir until everything is heated thoroughly (If you don't have a wok, use the bigger pasta pan to mix in, plus it has higher sides and you won't make as much of a mess stirring). This smells divine as it cooks so hope you are hungry!
