Chocolate Fudge Doughnuts

Modified from the King Arthur website


1/2 cup Dutch-process cocoa (I usually do have this around, at least a mix with it in it)

1 1/3 cup flour (I like bread flour here)

3/4 cup light brown sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

2 large eggs

1/3 cup milk

1 tsp vanilla

1 tsp vinegar, white or cider (I usually have both)

8 tbsp butter, melted

Powdered Sugar, optional


Preheat oven to 350.

Whisk the flour, sugar, baking powder, baking soda, salt and chocolate chips. Set aside.

In large bowl, whisk eggs, milk, vanilla and vinegar. Add dry to wet, stirring to blend. When raw egg is completely incorporated, add in melted butter. Make sure it is well combined.

Grease doughnut pans. Spoon batter into pans, filling about half to two-thirds full.

Bake for 12-15 minutes.

Cool on wire racks. I just sprinkled powdered sugar on them. You can ice them if you want (I'm way too lazy).

They say it makes about a dozen doughnuts, but that depends on pan size. My pans make a dozen but most only make 6. So I got more.
