BBQ Root Beer Ribs

Modified from Pampered Chef

1 rack (about 3 lbs) pork loin back ribs (baby back)

2 tbsp smoky applewood rub (this is a PC product)

2 tbsp smokehouse BBQ rub (I got this at Fred Meyer...so the recipe called for 3 tbsp of the PC Smoky BBQ rub, which I don't have)

6 oz root beer

1 cup barbecue sauce (I used Baby Ray's)

Remove membrane from ribs (I sort of did this...). Season both sides of ribs with rubs, then cut into 4 portions (I think I cut first, whatever).

Put ribs and root beer into Quick Cooker (instant pot) and lock lid. Set to Beef/Pork and hit start (which is like 35 minutes).

When timer is up, let steam release naturally for 10 minutes. Press manual release to let rest out. Remove ribs and keep warm. Take all the liquid and reserve 1 cup. Take that 1 cup and put back into the Quick Cooker with the 1 cup of BBQ sauce. Select sear and press start. Bring to a boil and cook uncovered for 5 minutes, stirring frequently. Press Cancel. Brush ribs with 1/2 of the sauce. Serve with remaining sauce for those who want more.

They recommend that you can also take the ribs - after brushing on sauce - and put in broiler on high for 5-6 minutes to crisp it up, which I might try for Ray next time. But the broiler hates me....
