Air Fryer Fish Cakes

Modified from Better Homes and Gardens

10 oz finely chopped white fish (I used halibut)

2/3 cup panko breadcrumbs (they used whole wheat, I used what was in my cabinet)

1 tbsp cilantro (or parsley...I didn't have until cilantro so I added the rest in as parsley)

2 tbsp sweet chili sauce

2 tbsp mayonnaise (they used canola, I used what was in my fridge which was the regular stuff)

1 egg

salt and pepper to taste

cooking spray

Coat the basket of an air fryer in cooking spray. Combine fish and other ingredients. Stir well and then shape into patties (they said 3 inch diameter, mine were about that, maybe a little larger...that's about the size of a burger).

Place in prepared pan and then spray with cooking spray. Cook at 400 for 10-12 minutes (they said 9-10, this is what it took me).

It says you should get 4 patties...I did 2.5 times this recipe and got 9, but probably could have easily made 8 had I realized earlier where I was on stuff).

They served with lime wedges. I had my as is. Ray and boys put them on buns and ate them like fish sandwiches, which Ray loves - and he loved this one.
