Pumpkin Bread

Modified from Very Best Baking

2 cups flour

2 teaspoons pumpkin pie spice

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

2 large eggs

1 can (15 oz) pumpkin [NOT pumpkin pie mix]

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup evaporated milk [this is about 4 oz, so one 12 oz can should make 3 loaves]

1 tablespoon vegetable oil

Preheat to 350. Combine first 5 ingredients in a large bowl. Blend rest of ingredients and then add in the flour mixture until just moistened. [You can do this by hand.] Bake for 60 to 65 minutes or until it passes the toothpick test. Cool for 10 minutes and then depan and put it on the wire rack to finish cool.

Forgot to buy the real pumpkin? You CAN use mix. So I had 30 oz cans, which would give you a double batch (so two loaves). So this is what I did

4 cups flour

4 teaspoons baking powder

1 teaspoon baking soda

4 large eggs

1 can (30 oz) pumpkin pie mix

1 cup packed brown sugar

1 cup evaporated milk

2 tablespoon vegetable oil

Bake as above. It is a smoother bread, but I think the other is better. But, hey a solution when you end up with the wrong stuff!
