Gingerbread Pancakes

Modified from the Bisquick Cookbook

2 1/2 cups Bisquick

3/4 cup apple butter

1 cup milk

2 tbsp vegetable oil

1/4 tsp cinnamon

1/4 tsp ginger

1/4 tsp nutmeg

2 eggs

Heat griddle or skillet.

Stir all ingredients until blended. Pour batter onto hot griddle (little less than 1/4 cup).

Cook until edges are dry. Turn, cook until golden brown (these are brown pancakes...it can hard to see so make sure to watch them!)

Servings: 6 servings (18 4 inch pancakes)
