Oatmeal Apple Cookies

1 1/2 cup shortening

2 1/2 cups firmly packed brown sugar

2 eggs

1/2 cup milk

3 tsp vanilla

2 cups flour

2 1/2 tsp cinnamon

1 tsp salt

1/2 tsp baking soda

1/2 tsp nutmeg

6 cups quick oats (not instant or old fashioned....for me, this was approximately an 18 oz canister....I just dumped the rest in when I realized I was close - might be a little shy/over, but worked for me!)

4 cups peeled, minced apples (I used my dicer) [this used 2 cups apples, 1 1/2 cups raisins, 1 1/2 cups chopped walnuts...I used straight apples]

Preheat to 375.

Combine shortening, sugar, egg, milk and vanilla. Beat at medium until well blended.

Combine flour, cinnamon, salt, soda and nutmeg in a bowl. Mix into creamed mixture on low until blended.

Stir in oats and apples (or anything else you want to add).

Drop rounded spoonfuls on cookie sheets.

Bake for 13-15 minutes or until set (they said 13 minutes, it took me 15 minutes). Cool for a few minutes on cookie sheet before putting on a baking sheet to finish cooling.

Makes 5-6 dozen cookies.
