AF Fish Sticks

Nonstick cooking spray (I use Pam)

1 lb white fish (I use halibut, but cod or haddock is fine), cut into strips about 3 inches long and 1/2 inch wide and thick.

salt and pepper

1/2 cup flour

2 large eggs

1 tbsp Dijon mustard

3/4 cup panko breadcrumbs

1/4 cup Parmesan cheese, grated

1 tbsp Old Bay

Tartar sauce, for serving

Cut fish and then pat fish dry with paper towels, then season with salt and pepper. Whisk flour more salt and pepper in a shallow bowl. Whisk eggs and mustard in a second shallow bowl. Mix breadcrumbs, cheese and seasoning in another bowl (I used a much larger one as I doubled this).

Spray basket of air fryer with cooking spray. Preheat to 400.

Dredge fish in flour, shake off excess, then dredge in egg and shake off. Finally coat in breadcrumb mixture. Put in a large baking sheet until their turn in the air fryer.

Working in batches (it took like 4 and I did two pounds), place some fish sticks in fryer in a single layer then spray with more cooking spray. Cook until sticks are golden brown and cooked all the way through, about 3-4 minutes a side. I did 4 minutes, flipped, then 3 more.

Serve with tartar sauce or lemon wedges or ketchup. I liked them fine plain as did kids. Ray used tartar sauce
