Cornbread Boats

Modified from Pampered Chef

1 egg

1 cup milk

3/4 cup sugar

1/4 cup oil

1/4 cup butter, melted

1 cup flour

1 cup cornmeal

1 tbsp baking powder

1/4 tsp salt

Preheat oven to 400 and spray a brownie pan with cooking spray.

Mix egg, milk, sugar, oil and melted butter. Add in flour, cornmeal, baking powder and salt. Mix until combined.

Evenly distribute between the 12 brownie pan wells.

Bake for 18-20 minutes or until passes toothpick test.

Remove from oven and use boat press to create a well in each cornbread. Fill with pulled chicken or chili or whatever you like.

Makes 12 servings.
