Barley Chocolate Chip Cookies

1 1/2 cups butter, room temperature

2 cups brown sugar, packed

1/2 cup sugar

2 eggs

4 tsp vanilla

4 cups barley flour

2 tsp baking soda

1 tsp salt

1 - 2 pkgs semi-sweet chocolate chips (so they used 16 oz of chocolate, chopped....I used 2 bags which seemed a little much, but it was good....)

Preheat to 350.

In a large blow, beat butter and sugars until fluffy. Beat in egg and vanilla.

Add in barley flour, baking soda and salt and beat on low until combined.

Add in chocolate and mix.

Drop by large spoonfuls onto a baking sheet and bake for 10-14 minutes (it took me 14) until golden brown at edges. Let them sit for a minute and then transfer to a wire rack to cool.

Makes 4-5 dozen cookies.
