Lemon Ricotta Pancakes

1 1/4 cups flour

3 tbsp sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt'1 cup ricotta cheese

1 large egg

2 large egg whites

1/2 cup fresh lemon juice

2 tsp grated lemon zest

1 tbsp canola oil

In a large bowl, whis flour, sugar, baking powder, baking soda and salt. In a medium bowl, whis ricotta cheese, egg, egg whites, lemon juice, lemon zest and canola oil.  Gently fold into the dry ingredients.  

Heat a griddle over medium heat.  Spray with cooking spray.  Pour some batter on skillet and fry until cooked through and set.

Serve with fruit sauce (I used raspberry rhubarb jam, they made a blueberry sauce).
