Apple & Cinnamon Cupcakes

Modified from Cupcake Heaven

1/2 cup butter, at room temperature (I just microwaved it a bit)

3/4 cup brown sugar

1/4 cup sour cream

1 1/2 tsp cinnamon

2 extra-large eggs

1 1/2 cups flour

1/2 tsp baking powder

1 1/2 apples, peeled, cored, and sliced

4 tbsp apricot jelly

Preheat to 350. Line muffin pan with cupcake liners.

Beat the butter and sugar until smooth. Beat in sour cream and cinnamon. Beat in eggs one at a time, then work in flour and baking powder.

Spoon half of the batter into liners, put a few slices of apples, then top with rest of batter. Put another few slices on top.

Bake about 20 minutes. Cool in pan then move to a rack to cool more.

While cupcakes are warm, heat up jelly and use it to glaze the cupcakes.

Makes 2 dozen. [Okay, I only got 1 dozen.]
