Applesauce
Modified from Better Home and Gardens
3 lbs (9 medium) apples, peeled, chopped, cored
1 cup water
1/3 cup sugar [you can go up to 2/3 cup, but honestly this was sweet enough for me and I'm the "sweet" eater]
1/4 tsp cinnamon, optional [I didn't use this because Ray doesn't like cinnamon]
In a large pot, combine apples, water and sugar (cinnamon if you are using it). Bring to a boil, reduce heat. Cover; simmer for 8 to 10 minutes or until apples are tender, adding more water is necessary (I added a tiny bit).
Remove from heat and mash/beat the apples to desired consistency (I used my immersion blender). Serve warm or chilled.
Makes 4.5 cups.
