Banana Bread

Modified from Better Homes and Gardens

1 1/2 cups flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp cinnamon

1/8 tsp salt

1 egg

1 cup mashed bananas (for me, this is two bananas....the books says 3 medium, but every banana I ever see is the same size....and it took me two on three tries, so I say two bananas)

3/4 cup sugar

1/4 cup oil

1 tsp lemon peel, shredded (optional....I can kind of tell the difference, but it isn't huge...if you have it, great, if not don't worry)

1/2 cup chopped walnuts or pecans (optional....I don't usually use as I don't like nuts)

Grease an 8 by 4 inch loaf pan. Preheat oven to 350.

In a medium mixing bowl the flour, baking powder, baking soda, cinnamon and salt. Make a well in a center of dry mixture; set aside. In another bowl, combine egg, mashed bananas, sugar, oil and lemon peel. Add egg mixture all at once to dry mixture. Stir until just moistened. Fold in nuts.

Spoon into prepared pan. Bake for 50-55 minutes or until toothpick is clean. Cool on a pan for 10 minutes.

Makes 1 loaf.
