Chicken & Vegetables

Modified from Simple & Delicious

4 medium potatoes, diced [this used potatoes, leeks, onions, carrots and parsnips...I simplified]

2 large carrots, sliced

1 onion, diced

4 chicken breasts [this used chicken legs, I don't like dark meat, hence this.]

1 can (10 3/4 oz) condensed cream of chicken soup with herbs, undiluted

2 tbsp parsley, chopped [or use 2 tsp dried]

1 tbsp dill [or 1 tsp dried]

1tbsp dijon mustard

Put carrots, potatoes and onions in the bottom of a crock pot with the chicken on top. Put soup on top of that and cook for 6-8 hours. Then remove the veggies and chicken and mix in the parsley, dill and dijon to the pan drippings to make the sauce.

Serve sauce on veggies and chicken.

Serves 4.
