Strawberry Pie

Modified from Emeril

Graham Cracker Crust [he made his own, I just bought one]

5 cups strawberries, halved [I used 2 bags of frozen]

1 cup sugar

1/2 tsp vanilla

3 tbsp cornstarch

1 tbsp water

3 tbsp brandy

In a sauce pan, combine berries, sugar and vanilla and stir over medium heat until sugar is dissolved. Combine constarch, water and brandy in a separate bowl and then add to the berry mixture. Cook, stirring occasionally, until mixture thickens [they said about 5minutes, this took me longer, but I think that was because I was using frozen]. Remove from the heat and cool. Pour into the pie crust. Cover and refrigerate for at least 6 hours or until filling sets.
