Swedish Oatmeal Cookies

Modified from Key Lime Pie Murder

1 cup butter

3/4 cup white sugar

1 tsp baking soda

1 cup flour

2 cups oatmeal (Quaker Oats - Quick or something similar)

1 egg yolk

Melt butter in microwave for about 1 1/2 minutes (watch it, it will bubble over if melts faster). Let cool to room temperature and then mix in white sugar.

Add baking soda, flour, and oatmeal. Stir thoroughly (this is all best done by hand).

Beat egg yolk with a fork and then add to bowl and stir (I like my fingers best for this). Now I get the POINT of the egg - its a binder - but these cookies are still VERY crumbly for me and a little annoying in that regards.

Grease cookie sheet if needed. Make small balls of dough and put on cookie sheet. Press down with a fork in a crisscross pattern (like peanut butter cookies). Here again - I find that this is pretty hard because they are so crumbly. As a note, do NOT refrigerate dough between batches or make it early and put in the fridge to keep. The dough will harden and be impossible unless you warm it back up somehow. (Can you tell what I did?)

Bake at 350 for 10-12 minutes until edges are just brown. Let cool and then put in wire rack (again watch or they'll crumble).

Servings: This SAYS 5 dozen, but even making really small cookies, I only get about 3 dozen.
