Sour Cream Apple Cardamom Bread

8 tbsp butter, softened

1/2 cup vegetable oil

1 cup sugar

1/2 cup brown sugar (you can make this...I did!)

2 eggs

1 tsp vanilla

1/2 cup sour cream

1 1/2 tsp cardamom (I actually have this in my cupboard as I use it in my chai mix)

1/2 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

2 1/2 cups flour

2 cups grated apples (they recommended gala or fuji...I think mine were macs...I used what was in the fridge!)

Preheat to 350. Grease two loaf pans (I used Pam for baking as I'm lazy and it works!).

Cream butter, oil and sugars. Add eggs, vanilla and sour cream. Stir together all the dry ingredients. Mix into the creamed mixture in parts.

Stir in apples (they also put in 1 cup of walnuts, which I didn't use).

Divide between pans. Bake for 60-65 minutes or until it passes the toothpick test (mine took 60 minutes, but I just did one). They say to rotate pans...since I only had one, I didn't, but if you have two, you might want to do halfway through. After 45 minutes put a cover on loosely to keep from overbrowning (I did do this).

Cool in pans for 10 minutes before de-panning to completely cool.
