Pecan Pie Biscotti

1 cup flour

1 cup whole wheat flour

2 tsp baking powder

1/4 tsp salt

3/4 cup brown sugar

3 eggs

1 tbsp butter, melted

1 tbsp maple syrup

1 tsp vanilla

1/2 tsp nutmeg

2 cups chopped pecans

Preheat oven to 350. Line a cookie sheet with parchment paper.

Add all wet ingredients into mixer and mix until well blended. Combine dry ingredients separately. Slowly add dry to wet until blended. Stir in pecans until evenly distributed.

Divide dough in half and shape each portion into a log. Dough will be sticky. Place log onto cookie sheet and flatten to 1 inch thickness.

Bake for 20 minutes, until slightly golden brown. Remove and let cool for 15 minutes. Using serrated knife, cut into 1/2 inch slices.

Lower temperature to 250. Arrange biscotti, cut side down on cookie sheet and bake for 15 more minutes. Flip and bake the other side for 15 more minutes.

Cool completely.
