Crockpot Pot Roast

4 carrots, peeled and diced

6 potatoes, peeled and diced [they didn't peel...would depend on potatoes for me]

1 onion, cut into chunks [they used more, I didn't think it needed more and I LOVE onions]

pot roast (2 lbs), trimmed

1 cup water [they only used 1/2 cup]

salt and pepper

Put vegetables in bottom of crock pot. Put meat on top of it. Season meat with the salt and pepper. Pour water over everything. Cook on low for 8-10 hours.
