Brownie Biscotti

Modified from Taste of Home

1 pkg fudge brownie mix

3/4 cup ground almonds (I bought a 6 oz bag of sliced almonds for a double batch and put them through the blender...it wasn't quite the 1 1/2 cups I needed so I topped it off with whole wheat flour)

1/2 cup flour

3/4 tsp baking powder

1 egg plus 3 egg whites

1 tsp almond extract

In a large bowl, mixed the brownie mix, ground almonds, flour and baking powder. In a small bowl, whisk egg, egg whites and extract. Add to brownie mix, stir until combine (umm...yeah...this is hard...I did it with my hands and almost kneaded it).

Divide dough into thirds and shape into rectangular logs. Bake at 350 for 24 minutes. Remove from oven and cool for a bit. Then cut into 3/4 inch slices. Place cut side down on baking sheets and bake for 12-14 minutes or until firm (this usually took me a little longer).

Cool. You can top with sliced almonds and melted white chocolate if you want. I didn't as I ship most of mine.

Makes 2.5 dozen.
