Oatmeal Cookie Muffin

Modified from A Brew to Kill by Cleo Coyle

***NOTE: Must soak oats overnight!!***

1 cup buttermilk (you can make this with milk and lemon juice)

1/2 cup rolled oats (not instant or quick cooking...old fashioned rolled oats or steel cut)

1 egg

1/2 cup dark brown sugar

2 tbsp. canola oil

1 tsp cinnamon

1 tsp vanilla

1/4 tsp salt

1/2 cup fruit (they used raisins, like oatmeal raisin cookies....I don't like raisins....I think apples would be better here! I did try these plain, but they need something....I'm going to try both apples and dried cherries)

1 cup flour

1/2 tsp baking powder

1/2 tsp baking soda

Combine buttermilk and oats in covered container and put in refrigerator overnight. To make batter, crack egg and beat lightly. Add oat mixture, sugar, oil, cinnamon, vanilla, salt and fruit. Stir well to combine. Add flour, baking powder and baking soda and stir. Do not overmix. It will be lumpy and that's okay.

Preheat oven to 375. Either use liners or spray tins with Pam. Put dough into muffin cups. Bake for 15-20 minutes or until top of muffin is firm to the touch or toothpick is clean. Cool on a rack.

Makes 6 muffins.
