Grilled Three Cheese Potatoes

Modified from Taste of Home's Grilling Recipe Collection

6 large potatoes, peeled, sliced 1/4 inch thick

2 medium onions, chopped

1/3 cup grated Parmesan cheese

1 cup (4 oz) shredded cheddar cheese, divided

1 cup (4 oz) shredded mozzarella cheese, divided

1 lb sliced bacon, cooked and crumbled (or diced it and then cook it, which I think is easier)

1/4 cup butter or margarine, cubed

1 tbsp minced fresh or dried chives

seasoned salt

pepper

Divide the potatoes and onions between two pieces of heavy duty foil (about an 18 inch square). I double wrapped mine to make sure it was thick enough because I just buy the regular Reynolds wrap. Spray with non-stick cooking spray. Combine Parmesan, 3/4 cup cheddar, and 3/4 cup mozzarella cheese and sprinkle over the potatoes and onion mixture. Top with bacon, butter, chives, seasoned salt and pepper.

Bring in opposite end of foil over filling and fold down. Crimp tightly and then cover with more foil (I coated this with spray also before I put it on so the cheese wouldn't stick to the top). Grill over medium heat for 35-40 minutes or until potatoes are tender. Remove from grill and open foil and sprinkle on the rest of the cheese. The recipe also says you can cook this in a 350 oven for 1 hour.

Makes 6-8 servings.
