Chocolate Chip Ricotta Loaf

1 1/2 cups flour

1/2 cup sugar

1 tbsp baking powder

1 cup ricotta cheese

2 eggs

1/2 cup chocolate chip (I made a batch and a half (that's how much ricotta I had leftover) and I used a full bag of minis)

1 tsp vanilla

1/4 half and half (or milk)

pinch of salt (I just shook a little in)


Preheat oven to 350. In a medium bowl, whisk the flour, sugar, salt and baking powder together. In another, stir ricotta, eggs, vanilla and half and half. Add together and stir until combined. Mix in chocolate chips. (They did put the chip into the wet first, this is what I did.)

Pam a loaf pan. Pour mix into pan and bake for 40-50 minutes or until passes toothpick test.
