Apple Cinnamon Doughnut Muffins

Muffins

3 cups flour

2 tsp baking powder

1 1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

3/4 cup butter, melted

3/4 cup sugar

1 cup grated or diced apples (we used our own frozen and diced)

2 eggs (they say large, I used extra large)

4 oz applesauce (we used our own)

1 cup buttermilk (I always make my own with lemon juice)

1 tsp vanilla

1/2 cup walnuts (optional, I didn't use)

Topping*

1/4 cup sugar

1 tbsp cinnamon

Preheat oven to 375. Grease a 12 muffin pan.

Combine flour, baking powder, cinnamon, nutmeg and salt in a large bowl. In a separate bowl, whisk melted butter and sugar. Then stir in eggs, applesauce and buttermilk. Add to flour mixture and combine. Add in apples (and walnuts). Mix topping separately.

Scoop into muffin tins. Sprinkle with cinnamon-sugar mixture.

Bake for 25 minutes or until done.

Makes a dozen muffins (I got more than that).

*They melted butter and put on the topping afterwards - way too lazy for that so what I have listed is what I did.
