GF Apple Bread

½ cup brown sugar

2 tsp cinnamon

2 cups gluten-free 1-to-1 baking flour

¾ cup sugar

1 tsp baking powder

1 tsp baking soda

¼ tsp salt

1 egg

1 cup milk or diary free milk [I used coconut milk here as I made this for a friend who was dairy-free]

1 tbsp apple cider vinegar

2 cups diced apples

Preheat oven to 350. Coat three mini loaves or 1 large loaf pan with cooking spray.

In a small bowl, combine brown sugar and cinnamon. Set aside.

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Mix well. Next add the egg, milk and apple cider vinegar to the dry mixture. Whisk just until combined. Coop some batter into the bottom of the loaf pan. Distribute some apples, then sprinkle some of the brown sugar on top of it. Repeat, ending with batter.


Bake for 35-40 minutes for mini loaves or 50-60 minutes for a large loaf. Depan and let cool.
