Strawberry Bread

1 1/2 cups whole wheat flour (they said white whole wheat flour...whatever that is..I just used regular whole wheat that I use my pizza dough)

2 tsp cinnamon

1/4 tsp salt

1/2 tsp baking soda

2/3 cup sugar

3 tbsp canola oil (they recommend coconut oil...yes, so not buying that and then you have to melt it!)

1/2 cup + 2 tbsp Greek yogurt (they used plain, I used strawberry flavored)

2 eggs

1 tsp vanilla

1 1/2 cups diced strawberries (I used frozen)

[They had a glaze, I didn't make it.]

Preheat oven to 350. Lightly grease loaf pan. [They had you use parchment paper, I didn't bother.]

In a medium bowl, combine the whole wheat flour, cinnamon, salt and baking soda. In a separate bowl, stir the sugar and oil. Then add in yogurt, eggs and vanilla.

Add wet to dry and stir together until evenly combined. Batter will be thick. Fold in diced strawberries.

Scrape into loaf pan and bake for 45-55 minutes (this took me pretty much an hour) or until passes toothpick test. Cover with tin foil at 30 minutes mark to prevent over-browning.

Let cool before slicing. Add glaze if you want.
