Onion Rings

Modified from Better Homes and Gardens

3/4 cup all purpose flour

2/3 cup milk

1 egg

1 tbsp cooking oil

1/4 tsp salt

Cooking oil or shortening for deep fat frying

4 medium mild yellow or white onions, sliced 1/4 inch thick and separated into rings (um, yeah, just make rings - it's easy as onions are circles)

For batter, in a medium mixing bowl, combing flour, milk, egg and the 1 tbsp of oil and salt. Beat until smooth.

Heat oil or shortening to 365 in at least 1 inch of oil/shortening. Using a fork, dip onion rings into batter, drain off excess batter. Fry onions rings, a few at a time, in a single layer in hot oil for 2-3 minutes or till golden, stirring once or twice with a fork to separate rings. Remove rings from oil; drain on paper towels.

To keep warm while cooking remaining batches, keep the fried rings in a 300 degree oven. (Yeah, I ignored this helpful hint - BAD THING TO DO! Cold onion rings are not so cool.)

Makes 6 servings.
