Cinnamon Apple Bread

1/2 cup packed brown sugar

1 1/2 tsp. cinnamon

2/3 cup sugar

1/2 cup butter, softened

2 eggs

2 tsp. vanilla

1 1/2 cups flour

1 1/2 tsp. baking powder

1/2 cup milk

1 large apple, peeled and finely chopped (mine was frozen)

Preheat to 350. Grease and flour a 9 by 5 loaf pan. Mix brown sugar and cinnamon in a bowl and set aside.

In stand mixer, combine sugar and butter. Add eggs and vanilla and beat until combined. Add flour and baking powder, then milk. Pour half o batter into prepared pan. Cover with half of the apples. Pat apples into batter with spoon. Sprinkle with half of sugar and cinnamon mixture. Pour rest of matter over apple layer, top with remaining apples and rest of brown sugar mixture. Pat topping with spoon.

Bake for 50 minutes or until passes toothpick test. Cook for 10 minutes in pan before putting on cooling rack.
