Banana Oat Muffins

Modified from Taste of Home


¾ cup flour

¾ cup quick cooking oats

1 tsp baking powder

1 tsp cinnamon

½ tsp baking soda

¼ tsp nutmeg

2 egg whites

1 cup mashed bananas (about 2)

½ cup brown sugar

¼ cup milk

¼ cup canola oil

½ cup chopped pecans


Preheat oven to 400. In large bowl, combine first 6 ingredients. In a small bowl, beat egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened. Stir in pecans.


Coat muffin cups with cooking spray. Bake for 15-20 minutes.
