Cottage Cheese Pancakes

Modified from Lemon Meringue Murder by Joanne Fluke

2 cups cottage cheese

4 eggs

1/2 tsp salt

1/2 cup flour

Mix all the ingredients and let it set for at least an hour in the fridge (I honestly didn't do this and it was fine). Cook in a frying pan on the stove. Serve with cut up fruit (you can roll them like blintzes). You can sprinkle with sweetener (like Splenda) if you want, but I thought it was good with just fruit.

Makes 8 pancakes.
