Sausage and Cheese Pancakes

Modified from Apple Turnover Murder by Joanne Fluke

1 large egg

1 cup unflavored yogurt (or sour cream, which I found on a substitution list and that's what I actually used)

1/4 cup cream

2 tbsp vegetable oil

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup flour

1/2 cup ground fried sausage (they used breakfast, I actually used Italian sweet), broken into small pieces

1 cup shredded cheddar

Beat egg until its fluffy. Whisk in yogurt (or sour cream), cream and oil. In a small bowl, combine the baking powder, baking soda, and salt with flour. Stir until evenly distributed. Add dry to wet and stir well.

Add fried sausage and cheese and stir in thoroughly. Heat your pan to medium-high and spray with Pam. You want fairly small pancakes, so just a couple of tablespoons of batter. Large ones will work, but will take a long time to get the middle done.

Fry until puffed and dry around the edges. Flip, flatten (I did this) and cook the other side. If you want everyone to eat together you can put these into a low oven until ready.

Makes about one dozen medium-sized pancakes.
