Apple Cider Donuts

Modified from the Faux Martha

3 tbsp. butter

1/3 cup + 2 tbsp. apple cider

1/2 cup whole wheat flour

1/2 cup bread flour (yes, really use BREAD flour...it is a texture thing)

1 tsp baking powder

1/4 tsp salt

1/4 tsp cinnamon

1/8 ts nutmeg

1/4 cup sugar

2 tbsp. honey

1 large egg

Topping:

3 tbsp. butter

1/4 cup apple cider

1/3 cup sugar (they said superfine, I just used regular)

1 1/2 tsp cinnamon

Preheat to 400. In a small pot, melt butter. Stir in sider and set aside to cool. Whisk flours, baking powder, salt, cinnamon and nutmeg in a bowl. Set aside. Into the cooled butter mixture, whisk in sugar, honey and egg until evenly combined. Stir wet and dry ingredients together until just combined.

Spray donut pan and put batter in it. Bake for 7-8 minutes. Cool for one minute then put on a cooling rack. Meanwhile make topping. Melt butter and stir in cider. Mix together cinnamon and sugar in a small bowl. Quick dip each donut in butter and ten coat with cinnamon/sugar mixture. Place on cooling rack. I wasn't thrilled this the glaze...I felt it was too sticky. I think I might do this without the butter/cider mixture next time.

Makes 6-8 donuts.
