Cheesy Orzo

1/2 small onion, chopped

2 cloves of garlic, chopped

2 cans (14 oz) chicken or vegetable broth

2 cups orzo pasta (or can use rice - orzo is rice shaped pasta - weird, huh?)

1/2 cup grated Parmigiano or Romano cheese

Salt and pepper

Preheat a medium sized pot with tight fitting cover over moderate heat. Add oil, onion, and garlic and sauté for 2-3 minutes. Add broth to the pan and bring to a boil. Stir in orzo and return broth to boil. Cover pot and reduce heat to simmer. Cook 15 minutes, stirring occasionally, or until liquid is all absorbed and pasta is tender. Remove lid and stir in cheese. Season with salt and pepper to your taste. Your favorite fresh herbs can also be stirred into orzo or rich to deepen the flavor (didn't try this). I thought this tasted like gourmet macaroni and cheese.
