General Tso's Chicken

Modified from a bunch of websites, including this one

***Needs an instant pot***

2 lbs chicken, cut into bite sized pieces

3 tbsp soy sauce

1 tsp tamari

1 tbsp honey

3 tbsp orange rhubarb jam (or orange marmalade if you don't make your own)

2 cloves of garlic, minced

1/2 tsp ginger

3 tbsp rice wine vinegar

1/4 tsp red pepper flakes

1 tbsp chili sauce

2 tbsp hoisin sauce

2 tbsp cornstarch

2 tbsp cold water

Turn your instant pot to sauté. Add chicken. (You will sauté it while you mix the rest of the ingredients.)

Mix the rest of the ingredients, save the cornstarch and water. Dump over chicken. Stir.

Close lid and set to poultry setting. Set timer for 5 minutes.

When complete, either do a natural or quick release (I've done both).

Mix cornstarch and water. Turn the instant pot back to sauté and add in cornstarch. Cook and stir for about 5 more minutes or until thickened.

Serve or rice or noodles.
