Sloppy Joe Biscuit Cups

Modified from What Can I Make in My....

1 lb ground beef

1/4 cup each celery, onion and green pepper, diced

1/2 cup barbecue sauce

1 tube refrigerated biscuits (so they did a 10 count that I couldn't find...I found a jumbo 8 count and then I broken each into two biscuits so I got 16 and that worked for me)

1/2 cup shredded cheddar cheese

Preheat oven to 400. In a large skillet, cook beef and vegetables over medium heat until beef is no longer pink, breaking up. Drain (I used moose and didn't to, but if you used hamburger you'd need to). Stir in barbecue sauce, bring to a boil. Reduce heat and simmer, uncovered, 2 minutes, stirring occasionally.

Separate dough (see my note earlier on this) and flatten each and press into bottoms and up the sides of greased muffin cups. Fill each with beef mixture.

Bake until biscuits are golden, 9-11 minutes. Sprinkle with cheese and bake until cheese is melted, 1-2 minutes longer.

Makes 5 servings.
