Apple & Cinnamon Muffins

Modified from 500 Cupcakes

2 3/4 cups flour

1 1/4 cups sugar (they said superfine...I used what I always use)

4 tsp baking powder

2 tsp cinnamon

4 tbsp vegetable oil

1/4 cup butter, melted

2 eggs, lightly beaten

3/4 cup buttermilk

2 small apples, peeled, cored and fined diced (I could have done more finely diced, but still liked it as is...I'm lazy!)

Preheat the oven at 350. Line a muffin pan with cupcake liners.

In a medium bowl, combine flour, sugar, baking powder and cinnamon. Set aside.

In a large bowl, beat the oil, butter, eggs, and buttermilk until well combined. Add the flour mixture and beat until nearly combined. Stir in apples. Try not to overmix.

Spoon into the cupcake liners.

Bake for 20 minutes (mine were more like 5 minutes). Remove pan from oven and cool for 5 minutes. Then remove to the muffins and cool on a rack.

Makes 1 dozen. [I made a double batch and got 3 dozen total, so I'd guess more like 1 1/2 dozen, but it really depends on the size of your apples.]
