Beefy One-Pot Dinner

Modified from Kraft

1 lb ground beef

1 cup chopped onions

1 cup thinly sliced carrots

1 cup finely chopped potatoes [make sure to chop this small so it can cook easily.]

1 cup water

1/2 cup barbecue sauce [they also put in 1 (14 oz) can of baked beans, which I hate and thus omitted.]

1 cup shredded cheddar cheese

Brown meat in large pot [they use a skillet, but I find it is easier and less messy to use a pot] that has a lid [make sure of this....I had to switch mid cooking because of this!]. Drain meat. Add vegetables and cook for 5 minutes, stirring occasionally.

Stir in water. Reduce heat to medium low and cover. Simmer for 10 minutes or until veggies are tender (why you need small potatoes and sliced carrots.]

Add barbecue sauce (and beans if you want) and stir. [Okay, this was way too runny for me...I'm going to drain off the water before adding the sauce next time...the beans wouldn't really help this and you need the water to cook the veggies, so I plan to drain...plus it will get rid of more fat at this point for you as well.] Cook 5 minutes or until heated through. Sprinkle with cheese.
