Chili Con Carne

The Fanny Farmer Cookbook

4 tbsp oil

2 onions, chopped

6 cloves garlic, minced

3 lbs beef chuck, diced

1 tsp salt

4-6 tbsp chili powder [I used ancho chili powder here as I had it left over from my mole chili]

1 tbsp cumin

1 tbsp oregano

cayenne pepper to taste [which for me isn’t a lot]

4 cups beef broth [I used bouillon cubes]

Heat oil. Stir in onions and garlic and sauté then add beef and cook until browned with salt. Add spices and cook for 5 minutes. Add beef broth and simmer, partially covered for 2 hours.

Serve with rice and/or beans. [I just did rice as I hate all beans but green beans].
