Roasted Potatoes

Modified from Taste of Home

2 lbs of small red potatoes, cut into wedges (they said unpeeled....I peeled as these were mine and were gross from storage)

2-3 tbsp oil

2 garlic cloves, minced

1 tsp thyme [they used rosemary, this is what I used, you can use whatever you want.]

1/2 tsp salt

1/4 tsp pepper

Place potatoes on sheet pan. Drizzle with oil and then sprinkle with seasoning, making sure to toss well.

Bake at 450 for 20-30 minutes or until potatoes are golden brown and tender.
