Zoodles with Tomato Saute

Ingredients For Zoodles with Fresh Tomato Saute

4 Zuchinni, spiralized

4 cups cherry tomatoes, whole

1/2 cup onion, chopped

1/2 cup green bell pepper, chopped

1/2 cup red bell pepper, chopped

4 cloves garlic, minced

3 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon pepper flakes

1-1/2 teaspoon oregano

1/2 cup fresh basil, chopped

Directions For Zoodles with Fresh Tomato Saute

Wash the Zucchini and spiralize.

Lightly salt the Zucchini and place it in a colander for at least 20 minutes so the liquid can drain from the Zucchini.

Pour the Zucchini from the colander and towel it off to wipe the excess moisture off of it.

Melt the butter in a large hot skillet, add the olive oil.

Saute the onions, peppers, and garlic,then add the salt, pepper, pepper flakes, oregano and basil.

Stir and cook until the spices are completely blended with the saute.

Add the tomatoes and cook until the tomatoes begin to pop.

Add the Zucchini and lightly toss with the tomato mixture.

Add 1 cup of water, cover the skillet and let cook on low for 8 minutes.

Garnish with fresh basil and parmesan sauce or parmesan cheese.
