Old Fashioned Pineapple Cake

Ingredients

1 3/4 cups all purpose flour

1 3/4 cups sugar

1 teaspoon baking soda

dash salt

2 eggs, beaten

1 (15 ounce) can crushed pineapple with juice

Baking spray for the baking pan

Directions

Sift all the dry ingredients together.

Add the beaten egg and the crushed pineapple reserve 2 tablespoons of the juice for the frosting, mix well

Spray a 9 X 13 baking dish with a baking spray.

Pour the cake batter into the baking dish.

Bake at 325 degrees for 35 to 40 minutes.

Let cool completely before frosting.

Frosting

1 stick butter, soft

1 (8 ounce) block of cream cheese

2 cups powdered sugar

2 tablespoons of the pineapple juice

Directions

Cream the butter and cream cheese together blend until smooth and creamy.

Slowly add the powdered sugar and pineapple juice.

Adjust the powdered sugar as needed.

Smooth over a cool cake.

Recipe Tips

Reserve some of the frosting in a small bowl and tint with a food color. Swirl the color with the white frosting.

A garnish suggestion:

Sliced pineapple and any type of decorations that would be good with the pineapple.
