Baked Steak and Potatoes

2 large yellow onions, sliced
2 pounds round steak,(we use grain fed beef)
1 cup flour
2 tablespoons onion powder
2 teaspoons garlic powder
1/8 teaspoon cayenne
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons cooking oil
4 medium Irish Potatoes, peeled and sliced
2 cups buttermilk
2 tablespoons butter
4 tablespoons parsley
Directions
With 2 tablespoons soft butter, butter a 9 X 13 baking dish.
Cover the bottom of the dish with the sliced onions.
In a medium mixing bowl, mix the flour, onion powder, garlic powder, cayenne, black pepper, and salt.
With 1/2 of the flour mix, dredge the steak in the flour mix making sure it is covered on all sides.
In a very hot skillet add the cooking oil and brown the steak quickly in the oil. As soon as it is brown, remove the steak and place it on top of the onions in the baking dish.
Add the sliced potatoes on top of the steak.
Mix the remaining 1/2 cup of the flour mix with 2 cups buttermilk, making sure that it is mixed well.
Pour the buttermilk mixture over the potatoes.
Cover the dish and bake at 325 degrees for 1-1/2 hours
Garnish with fresh parsley before serving.
