Sheet Pan Roasted Balsamic Cauliflower and Broccoli

Ingredients

1 small cauliflower, sliced in florets

4 cups broccoli florets

1 red bell pepper, sliced

2 onions, cut in wedges

3 garlic cloves, minced

1/2 cup vegetable oil

1/3 cup balsamic vinegar

1/3 apple cider vinegar

1 teaspoon salt

1 teaspoon pepper

1/8 teaspoon cayenne pepper

1 teaspoon dried thyme

1/4 cup dark brown sugar

2 tablespoons white sugar

Feta Cheese for garnish

Directions

Prepare all the vegetables and put them into a large mixing bowl.

In a shaker jar, pour the vinegar's, salt, peppers, thyme, and sugar. Shake the mixture until it is creamy looking.

Pour the vinegar mixture over the vegetables and mix until all the vegetables are completely covered.

Pour the vegetables onto a sheet pan.

Roast at 425 degrees for 30 to 40 minutes until the vegetables are tender and slightly browned.

Garnish with Feta Cheese
