Sausage, Veggie, Rice Pot

Ingredients

4 tablespoons olive oil

1-1/2 pounds smoked sausage, sliced in rounds

1 onion, chopped

1 green bell pepper, chopped

1/2 red bell pepper, chopped

3 cloves garlic, minced

2 medium yellow squash, sliced in rounds

1 medium zucchini, sliced in rounds

3 cups cherry tomatoes, whole

2 teaspoons thyme

1 teaspoon oregano

1 teaspoon salt

1 teaspoon pepper

dash cayenne pepper

1-3/4 cups rice

4-1/2 cups chicken broth

Directions

Chop the sausage and vegetables.

In a large heavy pot, heat the olive oil.

Sear the sausage in the heated olive oil, then add the onion green and red bell pepper, and the minced garlic.

On medium heat cook the peppers, onion and garlic until the onion and pepper are tender.

Add the yellow squash, zucchini and tomatoes, cook for 5 minutes, stirring so they don't stick to the bottom of the pan.

Add the thyme, oregano, salt, and peppers. Stir to make certain the spices are distributed well.

Stir in the rice.

Pour in the chicken broth and stir to make certain that you stir all the ingredients really well.

Cover and simmer for 20 minutes until the rice is tender.
